Most simple tart ever

This tart looks so much more spectacular than it really is.

Every year K and I go to a local orchard and pick apples, it’s just not fall without picking Burt’s apples. There is something awesome about wandering around an orchard, tasting and eating way to many apples and picking more than you think you can use. We’ve been going for a long time, and Burt and his wife seem to like us, so they ALWAYS give up way more apples than we’ve paid for. A couple of years we actually got trash bags full of drops, which are just the apples that have fallen off the trees. They are usually mostly still good, but you have to use them fast.

Those free trash bags full of apples are the reason I tried making applesauce. Before that I was always “why the heck would you make applesauce? Applesauce is applesauce right?” Nope, apparently not, I can’t even eat store applesauce any more, it has zero flavor.

We always pick a variety of different types of apples, which means anything I bake or make from them is just so much yummier than single apple type versions ever can be. No, I’m not bragging about my skills in baking or anything, next time you make apple pie or something grab at least three types of apples. Just trust me here.

Every fall I have bowls of apples everywhere I can find space, which also means I need to find uses. I have an amazing apple pie and a tasty tart with a cream cheese base, but I thought this year I’d try something new, and that’s how I found this tart. Absolutely the hardest and most time consuming part was cutting all those apples so thinly. Yes, we have a mandolin, but not only do I dislike cleaning the one we have, I kind of like stupid fiddly crap like this. Since I wanted to use a bunch of different types of apples, they were all different sizes, which made arranging them a tad tricky, but it was worth it.

Literally you make the dough base, top with apples and sprinkle with sugar and chunks of apples. That’s it. It wasn’t the best thing I’ve made, but completely worth the time and effort. My biggest issue with it was it completely relied on having a food processor, which I find annoying. You HAVE to use more than one type of apple I think, because all the flavor relies on them.
